Easy 9×13 Schaum Torte Recipe

This easy 9×13 schaum torte makes the perfect holiday spring or summer dessert treat to share. It is light, fluffy, and beautiful when topped with strawberries and cream.

It is made with a mixture of egg whites, sugar, vanilla, and more. It is beaten until fluffy and baked to perfection. Once cooked it can be topped with delicious strawberry topping and eaten. It is the perfect gluten and dairy free summer treat!

It is a favorite recipe of mine passed down by my mother-in-law. Knowing that we eat gluten and dairy-free due to food intolerances at our house she has a few go-to’s that she saves for when she will be with us and this is one of them.

This is a fairly easy and super delicious dessert that can be easily served gluten and dairy-free OR with ice cream or whipped cream if you can have dairy. Our whole family devours this when it gets made so I knew I had to have the recipe to make at our home as well.

Baking Schaum Torte Tips for Success

*I always use my stand mixer for this one or it will be a lot more work and a very sore arm to complete. I’m not sure I’d be brave enough to tackle making this without mine.

Begin by preheating the oven to 250 degrees. Add the salt, vinegar, vanilla, and egg whites to the bowl in the stand mixer and beat on medium-high until the mixture forms peaks.

Then add the sugar, cream of tartar, and baking powder gradually. Continue beating the mixture until it is very stiff. This could take anywhere from 10-15 minutes.

Pour the mixture in an ungreased 9x13in pan and level it out with a spatula. Then bake in the oven for 1 hour. After the hour is up turn off the oven but leave the Schaum torte in for an additional 45 minutes.

Meanwhile, you can prepare the strawberry mixture for the top. Combine ¾ Cup strawberries with 2 tbsp sugar. Blend in a blender until they are at the desired texture.

 *I like to use frozen, dethawed strawberries as I always have them on hand but you can also use fresh strawberries if desired as well.

Once the last 30 minutes are up take the torte out of the oven. Cut in 12 pieces and put one on a plate. Cover the piece of Schaum torte with the prepared strawberry mixture. You can also top with ice cream and/or whipped cream if you can eat dairy.

*While cooking the Schaum torte in a 9x13in pan isn’t the prettiest way to do it (You can also pipe it in bowl/torte shapes onto a cookie sheet) it is by far the easiest way and my favorite way to make it.

If you’re looking to make it for an event and want to wow someone you could definitely make Schaum torte bowls and eat with strawberries inside. But if you’re like me and are just all about taste and making quick easy desserts for your family, this is by far the way I would suggest making it.

Easy 9×13 Schaum Torte Recipe

Ingredients

  • Dash of Salt
  • 1 tsp vinegar
  • 1 tsp vanilla
  • 8 egg whites
  • 2 C sugar
  • 1 tsp baking powder
  • 1 tsp cream of tartar
  • ¾ C Strawberries
  • 2 additional tbsp sugar

Directions

  1. Add salt, vinegar, vanilla, and egg whites to a mixing bowl. 
  2. Beat until mixture forms peaks. 
  3. Gradually add the sugar, baking powder, and cream of tartar 1-2 tbsp at a time
  4. Continue beating until very still – about 10 minutes
  5. Pour into ungreased 9×13 in pan and use a spatula to even out the top.
  6. Bake in 250-degree oven for one hour. Then shut off the oven and leave in for an additional 45 min.
  7. In the meantime add the defrosted strawberries and additional 2 tbsp sugar to a blender. Blend them up to the desired consistency. 
  8. Cut torte and serve topped with strawberry mixture.

Cook Time: 1 Hr 45 Minutes

    Looks good! I had to click on this recipe because I had no idea what a schaum torte was but when I explored I realized that it was a really big meringue, or as I would call it in Dutch “schuimpjes cake”
    Will try it someday using plain egg whites from the supermarket because it’s always such a pain to separate that many eggs.
